I ordered an 18 pound heritage turkey this year, which the Fedex man delivered on Tuesday afternoon. I brined her for about 12 hours. I stuffed her with a bread/herb/chestnut stuffing, put her in a 275 degree oven at 10 am, loosely covered with aluminum foil. I basted from time to time. At 4:30 I increased the heat to 350, removed the foil and left her in another 20 minutes. 11 out of my 12 guests said it was the most incredibly delicious turkey they'd ever had. The 12 guest was one year old and didn't say much of anything.
