Like many Americans, I am a big fan of Italian foods. But when the sub maker asks me "Mozzarella or Provolone?" I literally am stymied.They both taste neutral/nothing to me.Yes, I've had American artisinal mozzarella and Fior de Latte, but (in the U.S.)I'd take a creamy Fontina or fontina-related cheese any day, esp. for a traditional Lasagna with Marinara etc. I could happily nibble on a good aged Parm at any time,and I would probably die if I ate all I wanted of Gorgonzola Dolce, but I'm looking for a creamy melting cheese when I make lasagna; and a noticeable but somewhat neutral flavor when I make a sub . Have you found any great substitutes? Thx much!
