I recently saw Ina Garten make a herb roasted turkey breast and was wondering if this would work for a whole turkey in a convection oven. She made a paste of chopped fresh herbs, lemon juice, garlic, and olive oil. She placed this under the skin AND rubbed the turkey breast with it.
I'm wondering about rubbing the turkey with this mixture and roasting it in a convection overn. Will it burn? Also, my previous understanding was to "dry out" the skin in the refrigerator overnight. That moisture kept it from getting crispy.
