Last year I ate at jackson fillmore and had a fantastic starter and while I have not been able to recreate it, I have thought about it since. It was slightly sautéed zucchini, toasted almonds, olive oil and some balsamic. I think. However my version has not been nearly as good, usally the zucchini is too soft whereas theirs was al dente-esque. Any thoughts as to what the ingredients are as well how to prep would be most appreciated. Thank you.
