Trying my first hand at:
Made my biga last night but it looked so darn dry that I added more water. It is rising beautifully and is bubbly but more liquidy. Do I just add more flour when I mix it? My 15 hour time limit for mixing the dough will be at 11am; can I hold off for a couple more hours or do I need to mix the dough and then wait?
What is the purpose of making a biga first as opposed to just mixing the dough and doing a couple of rises?
