Both of my kids (picky eaters, both of them...) have developed a fondness for fried chicken. The problem, of course, is that while I am generally a darn good cook, I make lousy fried chicken. I've conquered most of my weaknesses, pie crust and bread, most recently, but my fried chicken is not good, not good at all. I've read the recipes, I do try, but invariably I get something either soggy or burned black, and always raw at the bone. My friend (the Southern belle) tells me 'low and slow is the way to go', but if my fat isn't hot enough my chicken is flaccid and greasy..also my crust tends to float off during the frying process!
Help me...anybody out there make good fried chicken? I believe I need the 'Chicken for Dummies' version...hot fire? Low flame? Flour? Cornmeal? Eggs? No eggs? HELP!
