I have to heat two spiral cut cured hams for a function tonight. I'm wondering if it is safe to heat thee hams right in their Cryovac packaging in a low temperature water bath? The manufacturer won't tell me its safe because of liability. I want to do this because I'm lazy, there would be minimal loss of liquid and I want to leave them unattended for several hours. I have a temperature controller that I use for sous vide so I have the hardware to do this. Any thoughts?
