What's a Healthy Way to Prepare Soft Shells?

I just bought a couple really nice looking soft shell crabs. Problem is, I don't fry stuff at home. I don't even like to pan sautee with any significant amount of oil. Is there anything delicious but healthy I can do with these things?

If I've missed a previous thread on this, I'd be equally grateful for a link!
