I've been looking for a good sauce to put over my beans (mostly black and kidney, sometimes the other ones as well). Pesto has come on my radar since I've discovered that you can substitute other leafy greens for the basil.
Besides that I see that the other core ingredients are olive oil, pine nuts or walnuts, garlic, and lemon juice. Parmesan cheese is also common but I'm planning on cutting that out.
A couple questions:
1 . Is it okay to substitute the pine nuts/walnuts with peanuts?
2. What is a good ratio of greens to olive oil?
3. We don't have nutritional yeast where I live. I'm not too picky when it comes to these things so I may just skip the Parmesan altogether, but are there any other healthy substitution options that aren't too exotic/hard to come by?
4. Anything else you like to add? Especially for something like beans?
