I'm looking for a new vegan recipe to take to events at our community garden. Many people are vegan so I like to accommodate that choice. I also like to accommodate the "comfort food" desires of some older gardeners. In the past I've taken vegan: blueberry streusel coffee cake; zucchini, banana or pumpkin muffins; wacky cake. All go over really well but I'm looking for something new that:
Isn't overly laden with fat or sugar or oil
Isn't "fussy" with special flours, chia seeds or coconut or orange anything, etc. Flax seed and unsweetened apple sauce are fine.
Ideally can be frozen and defrosted without complications.
Can feed about 20 people as a finger snack per recipe
