i've been posting and reading on this board a while. i love the recipes i find and advice you all have to share.
i am a home cook, a crazy foodie, and also a professional chef. next week, i am going to audition for a really important private chef position! this person needs to lose weight and has health issues. he wants to hire a fulltime private chef to help him do just that. from what i've been told, he wants to try eating just fish and a lot of veggies. even some vegan dishes thrown in there. he wants to lose weight but not sacrifice the flavor that comes with a lot of fattening foods! s
o...this is where i come in. :) in my audition, i want to knock his socks off with a healthy and delicious meal. i'm assuming i will be doing a first course, entree, and dessert (although i am unsure of the guidelines yet) i have a lot of ideas.......... but of course, i thought i would beg my chowish friends to help me design a great tasting for this! any favorite healthy knockyoursocksoff apps? how about entrees? or side dishes? desserts? something creative, fresh, and alive with flavor! i appreciate any help you can give with advice. :) thanks so much!
