I'm making my first run at Marcella Hazan's Lasagne Bolognese this weekend, planning on Sunday dinner. I'm trying to break up the tasks as much as possible since I have a pretty full schedule this weekend (decorating, baking cookies, raking leaves, etc.). I'll make the sauce today and the béchamel on Sunday. I was wondering if I could make the noodles on Saturday, let dry overnight, then cook and assemble the lasagne on Sunday. What do you think? Would the noodles be too brittle when the time came to cook?
I know I can assemble the whole thing a day or two ahead, but I'm trying to make the pasta portion of the program a little more manageable. Thanks!
