finally followed through on a long-time intention yesterday and stopped in at the taco truck on haywood rd (covington is the nearest cross street). i don't recall if it has a name, but it's right next to a rim/low-rider/auto-paint shop.
i tried a chicken and a pork taco. both were very good. served simply with sauteed onions and cilantro, wedge of lime on the side. came with a thin, vinegary, hot sauce/salsa that actually had a little kick to it.
tacos are served on doubled-up corn tortillas, approximately 4" across. it wasn't a huge amount of food, but two were enough for a light lunch for me (i could have easily scarfed more, but i was a good boy).
they also have beef, tongue, shrimp and a few other fillings. i seem to recall tamales & tostadas on the menu as well.
two tacos set me back a whopping $2.50. you could stuff yourself for $5.
