Hope someone can suggest ways to fix this problem.
I was making a "simple" Hawaiian-style macaroni salad. Followed a recipe, and everything seemed to be going well. Per the last step, I covered the completed salad (looking great) tightly with plastic wrap and put into the fridge overnight to meld. In the morning, the mayonnaise dressing had gone clumpy, looking the way overcooked mac & cheese looks. I'm not sure if the dressing broke or if the macaroni simply absorbed the fat. There was no separated oil in the bowl and the macaroni still had a good texture.
Recipe I followed: cooked 1 lb box of small elbow macaroni per box directions. After draining mac, while still hot, sprinkled with about a tbsp. of cider vinegar, sprinkled lightly with onion powder, mixed in
shredded carrots and set aside to cool. Mixed the dressing: 2 1/2 cups store-bought mayo, added enough half and half to make it smooth and creamy (betw. 1/4 and 1/2 cup), added about a tsp. of sugar and another sprinkle of onion powder. When the mac had cooled sufficiently, mixed in the dressing, covered with plastic wrap (pressing down onto the salad to eliminate as much air as possible, and put into the fridge overnight.
