Now that I've moved away from New England I am trying to recreate an ersatz Pepe's/Sally's clam pizza at home. So it's got clams, garlic, oil... is that it? Does the white come from the crust base or mozzarella? Can't remember if these pies have the mozz.... I don't know if I ever noticed it or thought about it until I walked into the kitchen and tied on the apron. Is a Pepe's white different from a Sally's white? Help, grazie!
