One local supermarket is bringing in Hatch Green Chiles from New Mexico. Made a nice pork stew tonight with onions, corn, squash and some yellow tomatoes. The cubes of pork from a leftover pork roast. Used a very strong chicken stock and added some cilantro. Charred and diced up the green chiles ..... a great stew. Also made some quesadillas with pepper jack cheese and diced green chiles. (been roasted)
