Hatch Chiles subbed for Poblano Success!

Made the classic Mexican dish Rajas con crema that I usually use poblanos or pasillas, subbing roasted Hatch Chiles.

Came out a little spicier than usual, but the dish was really interesting. Will have to try it again next year when I can get my hands on them again.
