Hashiguchi & Taichi but don't speak Japanese

I am very excited to have reservations for Sushi Hashiguchi and Sushi Taichi (thanks to concierge). I chose those restaurants based on reading here and elsewhere, however more recently I came across a few posts that discouraged non-Japanese speakers from going to Taichi and so now I’m worried. We are working hard at basics like please, thank you, etc and also menu/food words, and trying to get up to speed on etiquette. I think we’re pretty good at being respectful and not being ugly Americans. My excitement is now tinged with anxiety, so any thoughts/advice?
