Harsch Crock water seal problems

takadi | Aug 17, 201408:41 PM     28

So I was fermenting some sauerkraut when I noticed that the water seal for my Harsch crock was disappearing. I kept filling it up and it kept disappearing after a few days. Finally I noticed the water levels in the crock was rising - the water was being sucked into the crock. Needless to say, the sauerkraut was ruined.

The only thing that could be causing this is a vacuum that is sucking the water into the crock. There are only two things that could cause this : air being depleted somehow inside the crock and causing negative pressure, therefore sucking in the water...or temperature drops that could cause negative pressure and suck the water in. After all, I thought pickling created lots of gas, and didn't know this would be a problem. I tried moving the crock to the basement where the temperature is more stable but it still seemed to be doing it though not as much. The only conclusion I can come up with at this point is that that the fermentation was actually aerobic instead of anerobic, so oxygen in the airspace (I filled it halfway) was being used up, creating negative pressure.

Does anyone have any ideas?
