Hard butter pie pastry

Hard butter pie crust

I make pies with lard all the time. They turn out flaky tender delicious. This butter crust turned out hard and the bottom crust was difficult to cut. The ingredients were kept cold the dough was not overworked. I carefully watched the addition of ice water.

The pie was placed in a hot oven to set the bottom crust. I can not figure out why this happened. I am a very experienced pie makers so I do know the pitfalls.
