Hapuku Fish Shop poaches a mean salmon

For our seder this last weekend, we served a whole poached salmon ordered from Hapuku Fish Shop in Rockridge Market Hall. Wow, was it terrific! It was about a 10-pound salmon, perfectly poached--so moist!--the skin removed and replaced with thinly-sliced cucumber "scales". The fish was standing up on a foam platter which was otherwise decorated with lovely mini carrots, peppers and so on. It fed twenty of us with a whole bunch left over. At $8.99 a pound plus $35 for the decoration, it wasn't cheap, but it was still pretty reasonable. Hooray for Hapuku Fish!
