I saw a cooking demo using carnival squash and decided to make it for a large group I'll be entertaining. I wanted to try out before doing it for company. The squash was VERY difficult to cut up. It was soo hard! The stem had prickly pics that were similar to those on a rose. Is there a secret to handling this vegetable and, does anyone have any "great" recipes? I was planning on BBQ it but maybe I should just roast them whole and then cut them up. Any advice would be appreciated cause I have 20 squash in my kitchen.
