I would like to know if anyone has inside information about burger joints around the city. I am not looking to rip anyone off. Does anyone know the particulars of burger production at places like PJ Clarke's, J G Mellon, Wollensky's Grill etc? I don't need to know the names of suppliers or anything. I just want to know if they grind the meat in-house, what cuts of meat do they use, what cooking methods do they use, how do they season their meat. I am looking for this information for my boss, a burger fanatic who has been meditating on burgers for quite some time. He asked me to try to uncover some specifics. He is simply looking to satisfy his curiosity. He is not in the burger or restaurant business.
