Still remember the taste of the hams in Virginia, hung outdoors to cure.
Probably illegal these days, but still remember the smooth slightly salty taste.
Just drove through Virginia a couple of weeks ago, and tried some different hams, including country ham which was fried to leather, at two different restaurants
Tried a couple of places for ham sandwiches, and it tasted like typical supermarket stuff.
What is the closest ham to it now (even if it is not from Virginia)?
