I need some help! I am married to a Trinidadian who is craving a Trini style Picnic Ham for Christmas. I have been researching different hams and I am so confused by the various hams available. Mom-in-law says that the Picnic ham is injected with brine and smoke flavor and cured but is not cooked. I am not finding anything that fits that description. Any Trinis out there that have found a comparable ham in the US? What am I supposed to look for? Any suggestions and sources for purchasing would be a great help!!
