Am staying in this fascinating city, in the Turkish-Surinamese district, watching friends cook long runner beans, curries, etc. The local outdoor Market in the Transvaal section has a fish stand run by a mother and two daughters worthy of Baywatch (minus silicone) who filet herrings with ease. It is a joy to taste raw herring with chopped onions that had been caught 4 miles away off of Scheveningen. The variety of North Sea and Baltic fish, its freshness, and the seafood are a wonder, as many varieties do not make it to the Atlantic. Cannot cook them at my hosts, as they are Hindus who avoid fish, meats, and other pleasures.
