P Haeberlin's B-Day Menu

Gastronomie reportsthat Paul Haeberlin's 80th birthday, celebrated yestereday night at Auberge de l'Ill, attracted many other chefs.

Paul Bocuse, Pierre Troisgros, René Laserre, Gaston Lenôtre, Antoine Westermann (Le Buerehiesel), Emile Jung (Le Crocodile), Hubert Keller (Fleur de Lys), and J-Georges Vongerichten were among the chefs attending.

Marc Haeberlin (P's son and lead chef at the restaurant) prepared:

-- "Risotto au poireau, Saint-Jacques et truffes blanches du Piémont" (Risotto of leeks, with scallops and white truffles from Piedmont)

-- "Dôme de saumon au pain Pumpernickel et sa brandade d'anguille fumée au caviar d'Iran Osciètre" (Dome of salmon with Pumpernickel bread and a brandade of smoked eel with oscetra caviar)

-- "Mousseline de grenouilles" (mousseline of frogs -- one of P Haeberlin's signature dishes).
