Gut respite: delis or light vegetable fare in Barcelona and Madrid?

I have an upcoming trip to Barcelona and Madrid, and thanks to the board, I've lined up a fantastic set of reservations. However, I'm concerned about food overload, and I'd like to work in a few clean, vegetable-based meals in both cities. Recommendations for casual, quick healthy meals (need not be locally-sourced or organic veggies; deli-type restaurant is perfect) would be greatly appreciated. I'll be staying in hotels without access to a kitchen, so preparing raw veg from a grocery store unfortunately isn't an option.
