Hi Chowhoundivores. I'm hoping to find an excellent butcher with good cuts of meat (e.g., center cut veal shanks at least 2 inches thick; large, meaty short ribs, english cut). I work in Sherman Oaks and would be thrilled to find a great butcher in the area. I love Mr. Guss, but he's so difficult to go to on a weekday for a working girl. Thanks!
