Gumbo pot - yes again!

My husband had made gumbo for the first time in a 7 qt Tramontina ECI, which is 11"x4". It turned out beautifully. As some of you may know on here, I began searching for the perfect gumbo pot, as the ECI was so heavy, and it barely held all of the gumbo at 7 qts. One of you (Politiceaux) heavily cautioned me against the 24cm stockpot, but I ended up purchasing it anyway, as the 28cm was around $300 (amazon.de wouldn't ship it to US), and Fissler US sold me a new 24cm 9.5 qt stockpot (9.5"x8") with damaged box (pot was perfect) for $100 including shipping. I couldn't turn it down! Now, my question: Hubby fixed another batch of gumbo in the new pot, and everything seemed great while he was making it, but it just wasn't as good as the first time. One problem was it wasn't thick enough, and he used the same recipe. Could it have been the cookware? Politiceaux- was it probably because it was too tall?
