Guanciali di Trota -- help me create an hors d'oeuvre

On a recent trip to Italy I bought a jar of guanciali di trota (cheeks of trout) from a smokehouse in San Daniele. I'd like to use them in an hors d'oeuvre but I'm stuck for ideas. Can anyone help me? Thanks!
