Guanciale at Russo's in the East Village

Russo's, the Italian deli on 11th st. just west of 1st. Ave. now carries guanciale.
This delicious cured hog jowl is the traditional meat used in spaghetti alla carbonara and pasta all'amatriciana. Try it and you'll never go back to using pancetta or bacon.
There's not as much demand for guanciale as there should be, so let's all buy it so Russo's keeps carrying it!
