Best way to do GT dinner?

So I got a 6:30 res at Gramercy Tavern for my hubby's bday on 4/23. Can't wait! We did 11 Madison Park 2 years ago and he was in heaven so this should be good :-)

I know it's all prix fixes but I believe there are some choices within that. I think he'll want to do it with wine pairings which sounds great, but I have heard it's a lot of food and a lot of wine. I've heard people say on these boards that the 3 course is better than the 7 course or get 1 wine pairing and split it.

I'm thinking we'll go whole hog with 7 course and wine pairings for both (hey it's his bday!) but just wanted the sage hound advice before we take the plunge.
