Need ground venison advice

I was fortunate enough to receive a gift of fresh ground venison (called "country style" sausage meat - but not in casings). I'd appreciate general advice on how to prepare something palatable with it -do's and don'ts. I know that venison tends to be dry, but this looks as though it has quite a bit of fat ground in the mix. So what would you make with it if you were handed a package tonight?
