I'm looking to make something that tastes a little and feels like grits, but isn't actually grits. I can't use any type of grain. (It's for someone with a medical issue) I was thinking about tossing some corn in a blender, and then maybe heating it slowly to get rid of some of the excess liquid before mixing in a little bit of yogurt to fluff it up. What do you guys think of this? Do you have any suggestions?
