Grilling Whole Fish Question...

I just picked up a small whole Milk Fish (1 1/2 lb), and small whole trout from the 99 Ranch Market. Any ideas/suggestions for grilling these would be much appreciated!

Also, SHRIMP with heads on were only $2.69/lb so I got a couple pounds. Question: When making shrimp broth, do you include the heads with the shells?
