Happy Labor Day Weekend!
We're having a picnic, with corn on the cob and sliced tomatos and watermelon and brownies and lemon bars (good picnics always have at least two desserts). I'm grilling stuffed pork tenderloin. Stuffing will be spinach, piquillo peppers and manchego cheese (one tenderloin), spinach and porcini mushrooms and artichokes (another loin), and spinach, black olive and sun dried tomato (third loin). What would you serve with it, sauce-wise? I will have access to stovetop and, of course, the grill. I'm just drawing a big blank on this. Maybe I don't need anything. Or maybe just grill some fresh pineapple slices or chunks for garnish. What do you think?
