Grilled Mahi Taco

Serves 2

Ingredients:
8 ounces of Mahi Mahi
1/2 cup of sour cream
1 cup arugula
1 cup steamed corn
4 small flour tortillas (lightly grilled)
1 small onion
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/2 teaspoon paprika
1 tablespoon fresh cilantro
1 tablespoon olive oil
Juice of half a lime

Mahi Preparation:
Combine the cumin, chili powder, paprika, salt, pepper and oil. Add the cover the Mahi in the marinade. Grill the Mahi for 5 minutes on each side. Cut Mahi into 1 inch pieces.

Arugula and Onion Salad Preparation:
Slice the onion and toss with the arugula and lime juice.

Parsley Sour Cream:
Combine freshly chopped cilantro with sour cream.
