I love this time of year because we do most of our cooking outdoors. I always grill the usual suspects as far as veggies: zucchini, summer squash, peppers, onions, mushrooms. I just bought these mini whole carrots (the ones with the stems on). I was thinking I should par-boil them first and then finish on the grill. Has anyone done that? Normally, I roast my carrots in the oven but it is too damn hot for that today.
