Grilled Bread Tip

I seem to be in a posting frenzy after some time away ...

A while ago I started grilling day old bread on my Le Creuset Grill pan ... heating the pan and brushing olive oil on the pan, not the bread. Added the bread and would push down with a spatula. Wasn't getting the desired "grill marks", but in a moment of inspiration last week, I set a cast iron skillet on top of the bread and, voila, lovely toasted bread with grill marks.
