Grill temperature for pork shoulder

I normally use a charcole grill for chicken, steaks, etc. but I've got an old gas grill that I was thinking might work to slow cook a pork shoulder or something like that. The problem is, the lowest I can keep the temperature is about 300. Is there anyway to cook something like that at that high of a temperature. Is there anything I can do to make it work.
