While shopping Saturday I overheard a woman asking the produce manager for green plantains. As I love plantains, I had to ask her what she was going to do with them. This was her answer: grate the green plantains and add them to garlic, onions and green peppers and cook in olive oil. Add water when needed (as it will tend to dry out) and cook until the plantains are the consistency of clam chowder. Then add peanut butter(!) stir, add the shrimp, and just before the shrimp are ready, add cilantro.
I asked her the nationality of this dish and she said she was from Ecuador, and had eaten this her whole life.
Has anyone heard of this dish and can anyone add anything?
I think I can "ballpark" the proportions but any tips will be appreciated.
