I had never realized until recently that green onion pancakes had become a crossover item in New York City Chinese restaurants, i.e., widely served at Americanized Chinese restaurants (including Cantonese restaurants). In contrast, here in California one only finds green onion pancakes at authentic Chinese restaurants, such as those in the San Gabriel valley serving Taiwanese, Shanghai or other non Cantonese cuisine. Consequently, in honor of transplanted New Yorkers (as well as any other fans of green onion pancakes) I'd like to report the best green onion pancakes I've ever found. They're at Earthen Restaurant, 1639 S. Azusa Ave., in Hacienda Heights, in the same shopping center as 99 Ranch Market and the West Coast Seafood buffet. Earthen's onion pancakes are perfect--light, thin, crispy enough, and just the right degree of saltiness. Earthen also makes good fish dumplings, too.
