Green Chile Sauce, Southwestern style

TastyJon | Dec 22, 200203:32 AM     2

I'm looking for either a restaurant or purveyor who offers for sale a really kicking green chile sauce.
The kind one might find smothering a burrito, enchilada (or many other dishes) or served in a bowl like a stew in states such as New Mexico, Arizona, Colorado, etc.

I'm not sure of its evolutionary route, but in the above states it is almost standard fare when ordering many Mexican entrees. Most burritos will come swimming in it. So will morning eggs.

If you know what I'm talking about here, these are not red salsas. These are thick, chunky sauce varieties (often with melting pork), that in their own right are heavenly, but even an o.k. version can make something like a simple bean burrito spring to life.

I know there are plenty of places in L.A. offering green salsas and/or green chile sauces. But there are none I've come across that have captured the spirit of the Southwestern sauciers. No knock on L.A. here.
I love our variations. It's just that I sometimes crave a dish drenched Southwestern style.

In Colorado (where I grew up), one could buy it to go from many restaurants, or from most supermarket delis. I used to bring back jars from trips to
Santa Fe. But for some reason I've yet to find a good source in L.A. Any leads?
