Green center of boiled and stored sweet potatoes - bad?

Hi everyone, first post here.

It is hard to believe, but after 43 years I just recently discovered sweet potatos. Wow!!!!

My first batch were boiled for about 20 minutes, cooled, cut into half, then stored in air tight containers in my fridge.

Two days later, most of them have a green center.

Is this mold, rot, or normal for sweet potatoes?
