A great tuna recipe

I make about 3 different kinds of tuna salad, but this one, which my mom taught me years ago, is the best. So easy, and I can never believe how very good it is:

2 6 oz. cans of tuna (packed in olive oil)
1 can or jar eggplant caponata (Progesso is fine,
imported is even better)
Handful of chickpeas (optional)
2 stalks of celery chopped
Juice of 1 lemon
generous splash of balsamic vinegar
--------

Just drain the oil from the tuna, mash it with a fork, and then mix in all the other ingredients. From this day forward you will cease associating tuna with mayonaise, I promise!
