great, traditional pie

I am looking for great, traditional pie. I am not necessarily picky about the flavor (apple, banana cream, strawberry rhubarb, pecan), but I dislike gloppy, corstarchy fillings and crust that is too thin and crispy. What I really want is lots of fresh filling and a tender crust. If you ever drive through Wisconsin on I-94, I would recommend stopping at the Norske Nook, which makes the kind of pie I'm dreaming about—particularly banana cream and raspberry.
