Just wanted to let Gestur know I was finally able to make his fabled rhubarb marmelade recipe. It took me since 2012 to track down the muscat raisins; only was able to get them finally last fall and made my Venetian polenta cake with them. I froze the leftover muscats and intended to look for fresh rhubarb this past spring. However, travel plans took us to the West Coast and by the time we got back--no fresh rhubarb was to be found! My husband recently found frozen rhubarb in our local supermarket so we were back in business! The next hurdle was seeding the muscat raisins, ugh. Running short on time and patience I resorted to a cheat; that is, I put them through my food mill to extract the seeds and used the thick sticky puree that resulted for the recipe. Just finished my batch of marmelade--looks & tastes like a winner. Guess I'll be haunting Apkarian Farms this spring to place a new order for muscats, unless Sunsweet has decided to sell them again. If they sell seedless muscats, want to try them out. If not, next time I plan to steam the raisins briefly to soften them up and see if that makes the manual extraction easier; if not, out comes the food mill again.
