"great range bison" buffalo steak medallion [Moved from Home Cooking Board]

i discovered this product in the freezer case at WFM yesterday when i was looking for my favorite ostrich fillet so i decided to give it a try.

excellent choice.

seriously lean but still incredibly juicy, tender and full-flavored. if you're like me and typically enjoy leaner cuts of beef like filet mignon, you'll love it.

you'd never know this steak was purchased frozen. i defrosted it for a couple of minutes in the microwave, and seasoned it with nothing more than salt & pepper. a quick pan sear on both sides in a screaming hot pan, then under the broiler for a couple of minutes, and voila! a perfect rare steak.

highly recommend.
