I'm having an open-house party in a few weeks. I want to serve a thick soup that can stay at a low simmer all day and still taste great. I plan to serve an assortment of freshly-baked homemade breads, plus platters of sandwich fillings for those who really want to nosh.
The soup has to be meatless, because some of my guests are vegetarian. I thought about chili, but I did that last year, and many of the young children just didn't like it (even though I don't make mine spicy). Also, I think vegetarian chili is not quite as good as con carne.
I was thinking of a bean-barley-lentil-vegetable concoction. The thicker, the better.
Does anybody have a recipe for something along these lines? Or, easier still, tell me what cookbook it appears in, and I'll search it out.
